Amid the condos in Portland’s Pearl District rises a glass-fronted building where gastronomic goodies are born and consumers’ brains are picked. It’s OSU’s Food Innovation Center, equipped with taste-testing booths, a conference room with one-way mirrors, and labs stocked with food starch, garlic powder, and shortening.

It’s here that companies and epicureans come when they want advice on launching a new product. Or when they want to know if consumers can taste the difference in, say, an ice cream with slightly less fat.
