The Year of the Bean

“Beans are good for you,” says Gerd Bobe, an Oregon State animal scientist and researcher in OSU’s Linus Pauling Institute. “They are high in fiber, vitamins, protein, and linked to a reduced risk of recurring precancerous colorectal tumors." And beans are good for the environment, too. They require very little water or fertilizer, and many of them fix nitrogen in the soil.

The United Nations has taken notice; they’ve declared 2016 The Year of the Bean.
